Many of you know that in addition to mosaics, ancient history, and wine, I am a bit of a foodie. One thing that surprised me when I arrived in Egypt was how different the falafel are here. I was surprised to find that it was bright green inside, instead of the usual pale yellowish beige of chickpeas. A brief bit of research indicated that this is because Egyptian falafel, as opposed to falafel in other Middle Eastern countries are made with fava beans, and not the standard chickpeas.
