Volcano Stuffed Olive
Email for Purchase Info
This island, as I've mentioned before, is part of a volcano that last erupted about 3600 years ago, and it's extremely arid here. I'm continually amazed, as a result, by how fertile this volcanically dry soil is. Olives grow all over the island, as do lovely little tomatoes, white eggplants, and katsouni, which is like cucumber.
The rocks here were scavenged from "Red Beach". Most of the beaches on the island have black sand, but this one is red, and it's worth the trek over a steep hill to get there.
